New Recipe
I stole this from my buddy Megan – she made it last week while we stayed with her and I had to make it this week because it was so good!
Boil 4 Chicken Breasts…while they are boiling, pour two cups of white wine into a pan and add two big handfuls of spinach. Once the chicken is done – dice it up really small – add some of the broth (about 1 cup) to the wine and spinach. Add salt and pepper – dice up an onion, a tomato or two and garlic – carmelize these – then add to the chicken, spinach, wine and broth. Then add a jar of Sun Dried Tomato Alfredo Sauce.
I served it with rice – basmati rice! – but Megan served it with noodles. It goes great either way – very very tasty and easy!!
Wow…
This week has been crazy! First I have to say – WOW – Tuesday we got our Penske truck and started loading it – oh my goodness! We had so much help from our church!! To just name some of them, Josh McInnis (who by the way also showed up with a 15 yr bottle of scotch!! ), Mike and Shelley, Geoff and Monica (Mon was there all day helping me clean before anyone came to help load!), Rick, Resa, Tyler and Chelsea Cross, Andrew, my wonderful neighbor Rebecca, my Mom and Dad and sister Alex – it was overwhelming saying goodbye to everyone but it was soo amazing to have all these people show up just to help us load up the truck! We are SO SO thankful!
Our drive was uneventful for the most part – we stayed our first night in Virginia. Second night was in Chat, Tn with Ruth and Ian – some of the best times EVER . You can’t not laugh with Ian and Ruth around! The third night was with Joe and Deborah – Deb is due in June and cooked and cleaned like crazy not only for us but for the Jim Jordan conference they were having the next day! Katie Shryer was there was well – one of the most cheerful amazing girls I’ve ever met! She just serves and serves! Finally we got on the road to Arizona – like really on the road – 16 hours of driving on Friday.! Spent the night in Texas. My home state!! It was good to be back but I forgot how FLAT Texas is. I loved it! After 13 more hours on the road Saturday we got to Arizona! We spent our first night in an empty rental home – Uriah has a friend here (Jon and Megan) and they own a home in Gilbert. So we spent the night there, went to church the next morning – got to see John and Moriah Barach which was terrific!! It was awesome to have a fun drink with Moriah – it’s been years!!
Sunday we came here to Jon and Megan’s huge house – my kids are sleeping in a king size bed and so are we! They’re incredibly hospitable – they give and give and give to everyone they know! We are so so thankful to EVERYONE that helped us Load our truck, move, their hospitality, their meals – I’ve cried so many times just out of awe! It was TERRIBLE saying goodbye to everyone but I’m really excited about being here – I’m so excited for Uriah’s job and the opportunity he has here!! The kids LOVE it here – it’s extremely hot here, that’s for sure!! We saw a black widow – it was huge! Jon killed it, thankfully!
So we have our house!! It’s beautiful!! I can’t wait to get pictures up -
for now, we’re well, everything is great and we’re so so happy and thankful to Christ Church in Cary, Nc – the help was just amazing – and all my friends and family – we so so miss you all!!!
Wow…
As a going away present my friends Erin and Shelley bought me a kitchen aid MIXER! How amazing is that? I’ve wanted one for a while but couldn’t bring myself to spend the money on myself….I cannot wait to use it!
Today I have Avi here keeping my kids occupied so I can get stuff done …
HAPPY BIRTHDAY to my mom!!! I love you!!
I can’t wait to, meet Virginia…
We’ll pick up Chelsea in a little bit then head on out to Uriah’s parent’s in the country – I am so so so happy to not have internet or cell phone service for 36 hours! And to get away from this house! God knows when we need a break, doesn’t He?
Allergy meds
Apparently allergy medication and I do not mix. I took two pills (like it says to do) and was so out of it …I just looked at my texts and realized I texted my sister in law and said “they shouldn’t say don’t operate heavy machinery, they should say don’t operate heavy life!” then i crashed for two hours. two hours I didn’t have either. sad. I’ll never take that again!
It’s hard to pack up your house! We have so many memories here – it’s really bizarre to pack them all up. We found a BEAUTIFUL home in Arizona for Rent – I’m so excited! It has access to a golf course and community pool so that’s handy.
Another 2 families in our church are handing meals for Sunday and Monday night ….seriously, who gets a week’s worth of meals before they move?? It’s been so so so helpful – esp with my kids!
Love is Kind…
I’m so thankful for my church family!! Today I got a fun treat – Kimberly ( my pastor’s wife) took me to this fun restaurant downtown – I had such a fabulous time! Then I used a gift card from Geoff and Monica (given to us at Christmas….I’m a little late using it!) and brought home a fun lunch to my husband – which he loved! Then my elder’s wife Kelly showed up with Sub sandwiches, chips, drinks and fun snacks for the kiddos!! So tonight’s dinner will be taken care of ….I’m so spoiled!!
Our house was looked at again today – they seemed to love it – Pls keep praying for that!
