Greek Pizza

I am always trying to figure out how to make the best pizza crust – it’s harder than you think!  Pita bread actually works REALLY well – simply brush on a little bit of olive oil and broil for two minutes …then add

1 tomato, diced

1/2 cup of fresh parmesan cheese

1/2 cup of fetta cheese

1/3 cup of red wine vinegar (I didn’t have that so I used this Red Pepper Vinegar dressing I had, worked well!)

salt and pepper

1 teaspoon oregano

a dash of italian seasoning

Mozzerella Cheese to top – broil until it’s all melted and a little bit brown on top.

GREAT pizza and it’s quick!

THE BEST rolls!

I found this recipe on allrecipes.com and LOVED it – I have made them twice this week – they are fantastic!

1/2 cup of water (warm) and 1/2 cup of milk

1 egg

1/3 cup of butter

1/3 cup white sugar

1 teaspoon of salt

3 3/4 cup of Flour

1 package of Fast Active Yeast

after you stir together, let it rise for about an hour then make the rolls – let the rolls rise for another hour or two – then bake for about 15 min on 350.  Add salt to melted butter – put on top of rolls once they’re done – so so so good.

Squash/Zuchinni/Asparagus Casserole!

I have a new recipe that looks and tastes great!  It’s an easy way to get your veggies in, without tasting them! lol That’s if you don’t like veggies, I do. Anyways…

Take two large Squash and Zuchinnis Cut down the middle (long) and lay flat to cook in the oven on 350.  Once they’re tender, take out of the oven, scrape out all the insides into a bowl and put the shells back in the oven to dry out. Add 3 eggs to the bowl, 1 and 1/2 cup chedder cheese, salt and pepper (about a teaspoon each, maybe more of salt), 1 cup of bread crumbs (or crackers!), 1 can of asparagus (or you can use fresh, I didn’t because it was cheaper).  Stir up well and put back into shells. Cook on 350 until brownish on top – looks great and tastes great!
